Chronos Brut
Both varietals were hand sorted, then whole bunch pressed. This wine is a blend of 80% Chardonnay and 20% Pinot Noir. The varietals were fermented separately with some lees stirring on the Chardonnay. Blended for complexity and finished in the cuvée close method.

2022 McWatters Collection Chardonnay
The grapes for this wine were whole-bunch pressed and went through a unique barrel fermentation on their lees for 10 months. This meticulous process allows for the development of complex flavors and a rich mouthfeel. All of the grapes used are sourced from Osoyoos, right on the US/Canada border, where the long, sun-drenched days coax forth luscious notes of honey and tropical fruits, creating a vibrant and expressive profile. A thoughtful 20% of new French oak is employed, complemented by monthly lees stirring, which enhances the wine's texture and depth, resulting in a beautifully balanced creamy Chardonnay with subtle orchard fruit and hints of toasted almonds.

Hand-harvested and carefully sorted, the grapes were whole-bunch pressed to preserve their purity and vibrant expressiveness. Each varietal was fermented separately before blending, resulting in a harmonious union of Ortega, Ehrenfelser, and Pinot Gris. This wine is crafted to be fruit-forward, crisp and fresh. Bottled soon after fermentation to retain its vibrancy, this delightful blend showcases its lively character, inviting you to enjoy its refreshing qualities with every sip.
